Red Velvet Cookies with a White Chocolate Custard Center

These cookies are festive and beautiful—-and so easy to make with boxed cake mix! The possible flavor combinations are endless, but here is how to make a simple, quick, and delicious red velvet cookie with a white chocolate custard center.

You can use any cake box mix and any pudding mix flavors. This combination was delicious, and can be made even more festive with an addition of nuts, sprinkles, chocolate chips, white chocolate, and more!

The Cookie

Cookie Mix

Cake mix cookies are simple and easy to make—even quicker than baking a cake! Pour a packet of cake mix into a bowl. Add melted butter and beaten eggs and mix well until fully incorporated. The consistency of the batter will be much thicker than a cake batter.

Use a large ice cream scoop to measure out each cookie and place onto a baking sheet, leaving space in between for them to spread. There should be about eight large cookies.

Bake in a preheated oven at 350° for about 15-18 minutes. The cookies should still be soft and not fully cooked, but about 75% of the way there.

The Custard

White Chocolate Custard Dollop

While the cookies are baking, whip up the custard! Pour a white chocolate Jell-O custard powder mix into a bowl. Add one cup of milk—half of what the box recommends. Using less milk will result in a thicker custard that will hold its shape on the cookies.

Whip the custard for about five minutes or until it is thickened.

Once the cookies are ready, remove them from the oven and using a much smaller scoop—like a melon baller size—scoop a dollop of custard onto the center of each cookie.

Place the cookies back in the oven and continue cooking for another 3-5 minutes or until they’re cooked through. If you press with a finger onto the side of a cookie there should be a slight resistance.

The custard center will also be firm and hold its shape too!

Cool the cookies slightly before enjoying! Warm cookies fresh from the oven are delightful—but these can also be stored in an airtight container for 2-3 days.

Ingredients

Makes 8 large cookies

Time: 30 minutes

For the Cookies

  • 1 red velvet cake box mix
  • 1/2 cup melted butter
  • 2 beaten eggs

For the Custard

  • 1 box white chocolate custard mix
  • 1 cup cold milk

Directions

1. Preheat oven to 350°

2. Combine red velvet cake mix with butter and eggs and mix until fully combined

3. Scoop onto a cookie sheet or tray using a large ice cream scoop and bake for 15-18 minutes or until slightly set

4. Combine custard ingredients and whisk until thickened-about five minutes

5. Remove cookies from oven and add a dollop of custard to the center. Bake again for 3-5 minutes or until the edges are set

6. Cool slightly and enjoy!
