Chocolate spice Crumb Cake is the perfect holiday dessert. It has three layers of delicious and intricate flavor. The first layer is a vanilla cake batter that is topped with a chocolate cake batter mixed mixed with holiday flavors like cinnamon, allspice, and ginger. The final layer is a crunchy, sweet crumble right on top.

This is definitely not a regular chocolate cake. Having a layer of vanilla first helps keep the cake a little lighter and not too chocolatey. The spices in the chocolate batter adds depth and flavor, bringing out all the beautiful holiday feels! And the crumble on top gives the cake texture-so it feels decadent but not overwhelming.

The cake itself is very simple to put together. Start by making the batter. Mix together eggs, sugar, milk, oil, and vanilla extract.

In a separate bowl combine the dry ingredients: flour, salt, and baking powder. Whisk well to incorporate everything together. Then combine the fry and wet ingredients and whisk until smooth.

Separate the batter into two and in one bowl add cocoa powder and spices; cinnamon, allspice, and ginger. This will make the chocolate cake layer. mix well and set aside.

Prepare an 8×8 baking dish by spraying with baking spray. Pour vanilla cake batter into the cake pan. Then drizzle over the chocolate cake batter all over the top. Set aside and make the crumble.

Melt butter in a shallow dish and add flour and sugar. Press the flour and sugar into the melted butter using hands until it becomes crumbly. Now crumble it over the cake evenly.

Carefully place the cake pan into a preheated oven at 340°. Bake for 50 minutes or until a toothpick inserted into the middle comes out clean. Remove from oven and allow the cake to sit and cool in its pan for 10 minutes. Then flip over and transfer to a cooling rack until completely cooled. Slice cake and enjoy!

For the crumble
- 1/4 cup butter, melted
- 1/4 cup sugar
- 1/2 cup flour
Directions
1. Preheat oven to 340°. Prep 8×8 baking pan with nonstick baking spray and set aside
2. In a bowl, combine eggs, sugar, milk, oil, and vanilla extract. Whisk well
3. In a separate bowl, combine flour, salt, and baking powder. Whisk well
4. Combine wet and dry ingredients in a bowl and whisk until incorporated. Pour half the cake batter into a separate bowl
5. In half the cake batter add cocoa powder, cinnamon, all spice, and ginger. Mix
6. Pour vanilla batter into the bottom of the prepared cake pan. Drizzle over the chocolate spiced cake batter evenly over the top
7. Make the crumble by combining butter, sugar, and flour. Massage together by hand until it forms a crumbly dough
8. Spread the crumble over the cake batter. Place in preheated oven and bake for 50 minutes or until a toothpick comes out clean
9. Cool in pan before transferring to a rack to finish cooling. Slice, and enjoy!
