Simple Pumpkin Loaf Cake

This recipe is for a very basic Pumpkin Loaf Cake that uses simple ingredients that you most probably have on hand! It’s easy to doctor up and make more special-such as by adding chocolate chips or walnuts.

Pumpkin Loaf Cake

Sometimes recipes for simple cakes can get overwhelming and confusing-using ingredients that most people don’t always have on hand. That’s why I’m sharing this very simple one using staple ingredients such as flour, baking soda, pumpkin purée, eggs, and oil.

I try to always have some sort of homemade cake or treat at home for my kids to snack on or grab for breakfast to encourage consuming less processed foods. This is is easy and simple to put together so it’s a go to in our house-especially during the fall!

Whisk Together Dry Ingredients

As most cakes start, first combine dry ingredients in a bowl and give it a whisk. Flour, baking soda, and salt. I like to add my baking soda through a sieve in order to avoid having any clumps of baking soda (it’s happened too many times 😭). Set aside as while preparing the wet ingredients.

Whisk Together Wet Ingredients

In another bowl, add sugar, brown sugar, eggs, oil, pumpkin purée, pumpkin spice, and vanilla extract. Whisk very well until completely combined.

Combine Wet and Dry Ingredients Until a Batter Forms

Then combine dry ingredients with the wet and mix gently until just combined and there are no dry flour pockets left.

Pour Batter into Cake Pan and Top with Chocolate Chips

Butter an 8×8 cake pan or loaf pan and pour in batter. If you like, too with chocolate chips and/or nuts of your choice. Bake in a preheated oven at 340° for 50 minutes or until a toothpick inserted into the center comes out clean.

Cool, Slice, and Enjoy

Cool cake before cutting into even slices and enjoy!

Ingredients

  • 1 3/4 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup oil
  • 1 tbsp vanilla extract
  • 1 tbsp pumpkin pie spice

Directions

1. Preheat oven to 340°. Grease an 8×8 cake pan and set aside

2. Combine flour, salt, and baking soda in a bowl and whisk well

3. In a separate bowl, combine sugar, brown sugar, eggs, pumpkin purée, vanilla, oil, and pumpkin pie spice. Whisk together

4. Combine wet and dry ingredients and mix. Pour into prepared baking pan

5. Add chocolate chips and any other toppings

6. Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean

7. Cool before cutting and serving. Enjoy!
