Once you make this chicken filling, you will go back to it over and over again! I’ve been making this for almost a decade now and it never fails.
It is the most flavorful chicken you can get with just two ingredients (minus the chicken). Okay, maybe I cheat a little because one of the ingredients is already pre-prepared with tons of flavor—salsa!
Something delicious happens when you combine salsa, cream cheese, and cooked shredded chicken. It’s creamy, robust, and full of flavor.
You can use this chicken filling in so many ways. I use it for quesadillas, enchiladas, taquitos, breakfast wraps, sandwiches, and more!
This is my go to chicken filling because it’s easy and delicious. To make it, simply cook chicken breast or thighs however you like, you can pan fry or even boil. I usually do a gentle pan fry, then let it sit to cool. After that, shred completely by hand or kitchen aid mixer.
Throw the shredded chicken back into the same pan then add salsa and cream cheese, you can adjust the ratio to your own taste. Once it melts and gets bubbly, your chicken filling is ready to enjoy!
You can even have this as a topping for nachos or a dip! Enjoy!

Ingredients
- 2 pounds chicken, cooked and shredded
- 2 lb salsa
- 1 block of cream cheese
Directions
1. Combine shredded chicken, salsa, and cream cheese in a pot on medium heat.
2. Cook until most of the water evaporates and mixture thickens. Stir every few minutes to prevent burning. Take off heat and serve how you like
3. To make quesadillas, warm tortillas on a dry pan, then spread on chicken mixture, sprinkle with cheese, and fry in a pan with a little oil to get the outside crispy. Serve with guacamole, cilantro, lemon, sour cream, and anything else you’d like.
